Roasted Garlic White Bean Dip
Looking for a dip that’s a little different? This white bean dip is easy to make, healthy and another favorite from the Gaiam Café kitchen.
Serves 4 to 6
Ingredients:
1 cup dried Northern beans or 1 16 oz can
1/2 cup of extra virgin olive oil
4 cloves of garlic, chopped coarsely
1/2 tsp of cumin
1/2 tsp of paprika (optional)
Pinch of cayenne
Salt and pepper to taste
Roasted Garlic White Bean Dip Directions:
Soak beans overnight with roughly 1 qt of water; Strain and rinse.
Cook beans on medium-low until tender.
Allow beans to fully cool.
In a small frying pan, add extra virgin olive oil and garlic.
Cook on medium-low until garlic is light brown.
Add rosemary and remove from heat.
In a food processor, combine beans, cumin, paprika, salt, pepper and garlic/olive oil mix.
Blend.
If dip looks thick, add in room-temperature water until dip is smooth and creamy.
Stop blending and check seasoning.
Use in salads, as a sandwich spread or as a dip for your favorite summer veggies. Enjoy!

How much Rosemary do you need for the Roasted Garlic White Bean Dip? It is not in the list of ingredients, but is added to the cooked garlic the the recipe directions.
