Roasted Cauliflower with Creamy Peanut Sauce

Roasted Cauliflower with Peanut Sauce

We love this healthy, vegetarian- and vegan-friendly spin on Indian food from the Gaiam Cafe: heavy on the veggies and spices, light on the oil and devoid of any animal products. Serve it as a side dish with chickpea masala and creamed spinach for a hearty, Indian-inspired meal.

Serves 4 to 6

Roasted cauliflower ingredients:

  • 1 head of cauliflower, cut into florets
  • 1 carrot, shredded
  • 1 Tbsp. cumin, ground
  • 1 Tbsp. curry powder
  • 1 Tbsp. coriander, ground
  • 2 Tbsp. extra virgin olive oil
  • Salt and pepper, to taste

Creamy peanut sauce ingredients:

  • ½ cup peanuts, roasted
  • ¼ cup sesame seeds, black or white, toasted
  • 1 Tbsp. cumin, ground
  • 1/8 tsp. clove, ground
  • ¼ tsp. cayenne pepper, ground
  • 1 nub of ginger
  • 1½ cups of water
  • Salt and pepper, to taste

Roasted cauliflower directions:

Preheat oven to 400 degrees. Toss the cauliflower florets with the shredded carrot, cumin, curry powder, coriander, olive oil and salt and pepper. Place on baking sheet and roast until tender. This should take 25 to 30 minutes.

Creamy peanut sauce directions:

Put all of the ingredients into a blender and puree until smooth. This should take 2 to 3 minutes. Pour the sauce into a small pot and bring to a simmer over medium-high heat. Lower to medium heat and cook out for 5-6 minutes, adding more water if necessary. Season with salt and pepper, then pour the hot sauce over the roasted cauliflower and serve.
